The chapter room has served as a dining hall for more than 500 years. Where monks once shared bread, silence, and prayer, today—under the direction of Celia Jiménez—Andalusian dishes are reinterpreted with contemporary creativity.

We are surrounded by a generous garden where we grow fruit, vegetables, and aromatic herbs used daily in the Hortus kitchen. Guests are invited to pick whatever inspires them, which our team will prepare on the spot.
